Luka’s Banana & Chocolate Bread

Ingredients

3 ripe bananas
1 ripe banana for top (optional)
2 eggs
80g of apple compote
2 tablespoons of maple syrup or honey
40ml milk
200g plain flour
3 tsp baking powder or 1 packet
Chocolate (either chips of chuncks)

Instructions

Preheat your oven to 180°
Grease your loaf baking tin (approx 23 x 12cm) and place some greaseprooof paper in the bottom of the tin.

Mash your three ripe bananas in a roomy bowl.
Then add in your eggs, apple compote, the maple syrup or honey and the milk.
Mix thrououghly together.
Next sieve in your flour and mix again.
Now you can add in some chocolate chips or chuncks (personal preference)
Pour the mixture into a lightly greased loaf baking tin.
As an optional extra you can take another ripe banana and cut it straight down the middle and place the two halves on top of the mixture.
Additional chocolate chips or chunks can then be sprinkled on top.

Place in the oven and cook for at least 60 minutes.

Tips

Often it can take a little longer to bake so you will need to check with a knife. Once cooked through take out of the oven and leave to cool for approx 10 – 15 minutes on a cooling rack.
