Greek meets Lebanese Salad

Ingredients

The amount of each depends on your pref.
Cherry Tomatoes – quartered
Cucumber – chopped small
Red pepper – chopped small
Cooked Quinoa (180g =2 pax)
Chopped coriander
Crumbled Feta
Sprinkle of pumpkin seeds

The Hummus:
1 can of chickpeas, rinsed & drained
4 tbsp smooth tahini
Juice of 1 lemon
3 tbsp olive oil
1 Garlic clove-chopped
3 tbsp water
pinch of salt
The Dressing
3 tbsp extra virgin olive oil
1 tbsp Balsamic Vinegar
1 tsp wholegrain mustard

Instructions

Make the Hummus – Mix all ingredients into a food processor and blitz until smooth & creamy
Make the dressing -Add all ingredients into a jar and mix well

Make the Salad – Toss all ingredients into a large bowl, pour over the dressing and mix well.
Spread the hummus onto a plate and pile the salad on top.

Eat on its own or serve with steamed fish or cooked chicken.
